Lemon Arugula Pasta Salad with Pine Nuts
SALAD INGREDIENTS
- - 1 box Campanelle Pasta
- - 6 cups washed Arugula
- - 1 cup Cherry Tomatoes
- - 1/2 cup toasted Pine Nuts
- - 1/2 cup shaved Sharp White Cheddar Cheese
- - 1/4 cup Balsamic Glaze for drizzling
- - Salt and Pepper to taste
DRESSING INGREDIENTS
- - 1/4 cup Olive Oil
- - 1/4 cup Red Wine Vinegar
- - 1/4 cup Lemon Juice
- - zest of 1 Lemon
- - small bunch of fresh Basil
- - 2-3 tablespoons Honey
- - Salt and Pepper to taste
- 1 | Cook pasta in salted water according to directions on the box. Drain when finished cooking and set aside.
- 2 | To make the dressing throw all ingredients into a blender and blend until everything is smooth.
- 3 | Toss the cooked pasta, arugula, tomatoes, and pine nuts in the dressing.
- 4 | Top with a drizzle of balsamic glaze, salt and pepper, and shaved white cheddar.
- 5 | Share and enjoy!
** Please note: I cook more according to taste than measurements so feel free to change up how much or how little you add of each ingredient. Also if you don't have a certain ingredient or don't like something feel free to change it up it bit. You really can't go wrong :)
